Jennifer’s 22 Days Vegan Success Story

This week’s 22 Days Vegan Success Story comes from Jennifer, a busy working mom of 2 who decided to challenge herself to a plant-based diet for 22 days. 22 Days Nutrition: Tell us a little bit about yourself.

Jennifer M.: I am a mom of 2 girls ages 11 and 14.  In addition to working full time, I have a very busy life with all of their activities.  My oldest daughter will be going into high school in the fall and is very active in sports especially soccer.  Soccer for us is a year round activity and takes up 5 evenings a week.  My younger daughter is into Tae Kwon Do and has class 3 times a week also in the evening.  Without help from my husband, I could never get the kids where they need to be by myself and take care of a household.

22D: Tell us, which 22 Days Vegan Challenge program did you follow?

JM: I did the 22-Day Revolution

22D: How did you hear about us?

JM: I actually heard Marco and another guy on the Elvis Durran Show a little over a month ago talking about The 22-Day Revolution book.

22D: Why did you choose to try a 22 Days Vegan Challenge?

JM: I am not sure why, but something told me I should try it.  This is not anything that I have ever attempted before or would have even thought about.  I have done many diets and different eating plans over the years and nothing has stuck too long for me.  However, I heard the radio interview and thought “why not?”  So I started to research and ordered the book.

22D: How long have you been following the 22 Days Vegan principles?

JM: I have been doing is for a little over a month now.

22D: Tell us a little bit about your average day now that you’re following a plant-based diet.

JM: I get up every morning for work and because I am on the go, I grab a protein bar and head out the door.  At work, I drink water all morning and try to get in 1 bottle an hour throughout the day until I fulfill my water needs.  For lunch I usually try to get in something more substantial so I will make brown rice in advance and stir fry vegetables for lunch or a salad with plenty of vegetables.  Sometimes, I will go to Chipotle and get a bowl with only the “good” stuff.  For dinner, I vary my diet by keeping lots of vegetable options in the house.  On occasion I will have a sweet potato with a little maple syrup, but mostly I look for ways to change up the veggies.  Last night I had a ratatouille casserole that I made from a recipe I found online that had eggplant, zucchini, squash, onions, peppers and a tomato sauce.  I changed it up some and added some portobello mushrooms too. So far my absolute favorite is a veggie wrap for lunch in a spinach wrap with spinach, sauteed onions and peppers, tomatoes and portobello mushrooms.  It is wonderful. With running my girls for activities, I do have minimal time for exercise, but try to walk at least 3 times a week. I’m hoping to work up to running soon.

22D: How has following a 22 Days Vegan Challenge impacted your life?

JM: So far I have lost 14.5 lbs.  By losing this weight and changing my diet, I am feeling more energetic and just happier.  I am proud of what I have accomplished and even though my husband isn’t following the plan with me, he is eating better and has also lost 17 lbs in the same time frame.

22D: What other health improvements have you seen?

JM: In addition to the weight loss, I don’t know that I have seen a specific health change other than the way I feel.  My numbers have always been good when I would have a doctor visit, but I just felt tired all the time and that has stopped.  I have more energy and just feel better.

22D: What words of encouragement do you have for others who are getting started or are considering a 22 Days Vegan Challenge?

JM: In my experience it wasn’t as hard as I thought.  I would say to order the book and use the shopping lists and the tips provided to come up with ideas on how to eat.  I started my challenge before the book actually arrived because it was on backorder and made a few mistakes because I was guessing about some things.  Once I received the book and read it, I have changed a few things in my diet.  I would say just to do it and you’ll see how easy it is to adjust.
