Aja's 22 Days Success Story
Aja Hurst of Camden, New Jersey discovered the amazing health benefits of a plant-based diet the same way many people did – hearing the news that Beyoncé was incorporating more plant-based meals into her diet to improve her health.
That news and seeing the stunning photos of Beyoncé at the 2015 Met Gala inspired Aja to try something different to get healthy. Following The 22-Day Revolution, she adopted a plant-based diet for 22 days and then based on the tremendous results, she decided to make it a way of life.
We asked Aja to share her Success Story with us and here’s more about how this wife and mother of 3 incorporates a plant-based diet into her life.
Why did you choose to try a 22 Days Vegan Challenge?
Aja Hurst: At the time, my grandparents were having a lot of health issues and I knew that I did not want to age like that. I had wanted to try a vegan diet but I was nervous about all the imitation meats. I feel like 22-day revolution broke down the difference between vegetarian, vegan and plant-based lifestyle.
How long have you been following the 22 Days Vegan principles?
AH: August 29, 2016 has made it a whole year!
Tell us about your average day now that you’re following a plant-based diet.
AH: The first thing I do in the morning is drink lemon water or a cup of tea. Mid-morning I will have oatmeal or a bowl of fruit.
My favorite FAVORITE thing is to have avocado on toast (Ezekiel bread) for lunch with sautéed onions, mushrooms, nutritional yeast and roasted cherry tomatoes with a salad.
For dinner it varies, I always make sure to have green leafy vegetable, and some type of legume (soaked the night before), and a bowl of fruit if we are still hungry. I drink lots of water throughout the day, snack on fruits, and we LOVE making popcorn on the stove, it actually tastes much better than the microwaved popcorn, (my 13-year-old is able to make it now too).
How has following a The 22-Day Revolution impacted your life?
AH: It has impacted me in a HUGE way! Thinking about it makes me a little emotional because the way I was eating was going to kill me. I actually enjoy eating healthy, and cooking with fresh ingredients, my family and friends are always asking me for help and I say “Just get The 22-Day Revolution book”.
How much weight have you lost? What other health improvements have you seen?
AH: When I started this journey in August of 2015, I weighed 198 pounds. By July 2016, I weighed 154 pounds. I have a syndrome that makes it difficult for me to do certain workout routines and I still lost all that weight!
I am always in the mirror looking at my skin and how bright it is, it was very dull looking before, I’ve always felt pretty but now, I feel beautiful.
I have a neurological disorder called Chiari malformation syndrome. It caused me to be in a lot of pain, and I would have headaches almost every day, (a few different kind and really bad migraines) the other headaches have stopped and the migraines are almost nonexistent too.
What words of encouragement do you have for others who are getting started or are considering a The 22-Day Revolution?
AH: It’s mind over matter. If you can be strict on yourself for the 22 days, I promise everything will naturally fall into place. Your body will start to crave the healthy things that you have been putting into it.
If you live in an “urban” area like I do and have trouble finding some of the ingredients in the book don’t be discouraged, just think outside the box, the corner store always has dried beans, rice, and even canned vegetables if you have no other option… and lastly don’t let anyone tell you that it’s too expensive. When I first started The 22-Day Revolution I was on food stamps. It actually turned out to be cheaper! I got everything that I could from the produce store and everything else I needed from the supermarket.
How has your family’s diet changed since you adopted a plant-based diet?
AH: My husband and children have also come along with me on this plant-based lifestyle. I thought my already skinny husband was going to lose even more weight but he has maintained his weight, and so have my children. My 13-year-old really loves it especially since most of her friends are going the acne stage and her skin is really really clear!
