Recipe: Brussels Sprouts Salad

Makes 4 servings

Ingredients:
1 pound Brussels sprouts, washed, stems trimmed (approximately 4 cups shredded)
Balsamic Vinaigrette Dressing (recipe page 311)
1 Haas avocado, chopped
1/2 cup chopped walnuts
1/3 cup dried cranberries
Creamy Cashew Balsamic Vinaigrette Dressing (recipe on page 327)

Preparation:
1. Shred Brussels sprouts by halving each sprout and then cutting multiple times vertically from top to the base. Alternatively, use a mandolin slicer or food processor to make quick work of it.

2. Transfer the shredded Brussels sprouts to a mixing bowl and toss together with about ¼ cup of Balsamic Vinaigrette Dressing until well combined.

3. On a serving platter or 4 individual plates, place a layer of shredded Brussels sprouts and top with avocado, walnuts and dried cranberries.

4. Drizzle with Creamy Cashew Balsamic Vinaigrette Dressing and serve!
