Feel free to throw in any extra veggies you might prefer, celery or kale would make for a nice touch. Prebaking the squash beforehand makes things move more quickly, you could certainly do it the day before to save time.

This recipe from the gourmet masters Food & Wine just sounds cool, and looks beautiful too! Baking the mushrooms inside the apples leads to a unique blend of flavors, and with just a few ingredients it’s a snap to make.

3. Vegan Garden Keeper’s Pie
Sometimes it’s just as important that a vegan Thanksgiving recipe look great as well as taste great, and this savory dish from The First Mess is no exception! Full of delicious, good-for-you items like beets, carrots, and squash (or whatever hearty winter veggies you prefer), topped with a celery root mash and baked to perfection, you might want to save some hassle and bake a double recipe – just in case!
4. Crispy Smashed Potatoes with Avocado Garlic Aioli
Angela from Oh She Glows creates some of the most beautiful vegan recipes and this one is no exception. This recipe looks (and sounds) amazing, yet is really easy to make, with just a few ingredients and with the help of a food processor to blend up the sauce. They do take nearly an hour to cook, though, so plan accordingly.
5. Lentil Mushroom Balls with Cranberry-Pear Sauce
Another winner from Oh She Glows and a wonderful alternative to standard stuffing, this recipe is tasty and has a terrific presentation. Of course, cranberry sauce is a must-have at any Thanksgiving feast, and this recipe is straightforward, delicious and can be prepared in advance.
6. Cranberry Orange Quinoa Salad
This delicious recipe from Family Spice pulls together some lovely fall colors to create a dish that’s just as beautiful to look at as it is tasty to eat! We love the fresh flavors of orange, cranberries and pomegranates. This recipe takes very little time and effort to make – perhaps a great choice for a potluck Thanksgiving?

We could hardly believe that these gorgeous little desserts were not only vegan, but also gluten-free and sugar-free. The recipe from Elana’s Pantry is fairly simple to put together, but will make a huge impression on your dinner guest.
