Just because you’ve decided on a plant-based diet (and good for you!) doesn’t mean you can’t get the same enjoyment your carnivore-consuming friends do out of a good backyard barbeque. Which is why we’ve pulled together some of the most delicious, party-worthy recipes for you to try this summer.
On the Grill
Black Bean & Corn Veggie Burger Here is a great recipe from Genna Hamshaw for an easy but delicious veggie burger that just takes a few ingredients. Flatbread Pizza Just because dairy is out of your life doesn’t mean you can’t enjoy a delicious grilled pizza (this recipe even includes a gluten-free pizza dough) topped with veggies and homemade almond “ricotta”. Grilled Garlic-Herb Corn Rather than waiting for a big pot of water to boil, chuck your cobs on the grill! This recipe is super easy and delicious. Remember you need two hours for the “marinade” to meld together all of those great flavors together – you can always do this part the night before. Grilled Artichoke & Quinoa Lettuce Wraps These beautiful wraps will wow your guests and their simple preparation will limit your time in front of the grill.
Off the Grill
Slow Cooker Black Beans The perfectly easy addition your next cookout! Make a delicious side of beans that you can make the night before. Caprese When tomatoes are in season, this salad is at its best! To make it plant-based, simply swap the cheese for avocado. Crunchy Walnut Coleslaw Healthy, hearty, and really pretty to look at, this side dish is great for potlucks or as a healthy alternative to mayonnaise-based slaws. The combination of colors makes it almost too pretty to eat. Almost. Herb Pesto Pasta Salad An easy dish that can be prepared ahead of time and refrigerated, this salad is easy, filling, and flavorful. Make your own pesto for a different twist, or buy a prepared version to save time. Red onions and dill combined with a delightful avocado/dijon sauce make for a memorable experience. We recommend doubling the batch – just in case. Watermelonade This recipe is easy, delicious, and refreshing on a hot day. Don’t forget the mint – it’s the key!
