Chickpea Hand Rolls 2-4 servings  Ingredients: 1 head butter lettuce 1 cup cooked chickpeas, slightly mashed 4 teaspoons tahini 2 lemons, juiced 1 teaspoon coconut aminos ½ tbsp. cumin ¼ cup diced celery 1 tbsp. chopped parsley sea salt and pepper to taste

  1. Toss all ingredients (except for chickpeas and lettuce) in a bowl and whisk until smooth.
  2. Pour dressing over chickpeas and toss to coat evenly.
  3. Scoop chickpea mix onto lettuce cup and wrap neatly into a small hand roll.
