One of Marco Borges’s favorite recipes and a snap to make, these Chickpea Hand Rolls are the perfect party dish. This recipe, along with 65 others, can be found in Marco’s book, The 22-Day Revolution. Chickpea Hand Rolls 2-4 servings Ingredients: 1 head butter lettuce 1 cup cooked chickpeas, slightly mashed 4 teaspoons tahini 2 lemons, juiced 1 teaspoon coconut aminos ½ tbsp. cumin ¼ cup diced celery 1 tbsp. chopped parsley sea salt and pepper to taste
- Toss all ingredients (except for chickpeas and lettuce) in a bowl and whisk until smooth.
- Pour dressing over chickpeas and toss to coat evenly.
- Scoop chickpea mix onto lettuce cup and wrap neatly into a small hand roll.
