7 Mexican-Inspired Vegan Recipes

If you’re a new vegan you might think that you have to “give up” on certain foods to successfully cut meat out. That couldn’t be farther from the truth. You’ll find that so many of your favorite foods can easily be enjoyed on a plant-based diet. Case in point, so many of the delicious foods you love, from beans to avocados, are found in healthy Mexican vegan recipes. Here are some of our favorites:

1. Black Bean Salsa

There’s nothing better as a healthy, delicious, snack as a good salsa. This is a great recipe to make use of fresh ingredients like tomatoes and cilantro. Top it with fresh avocado and dig in with your choice of chips or veggies.

2. 7-Layer Dip

Here’s a perfect dip for parties. It’s easy, looks gorgeous, and tastes fantastic. You can experiment with ingredients and add/subtract to end up with a customized recipe.

3. Butternut Squash Chipotle Chili with Avocado

You don’t need meat to have a great chili, but adding a substitute will help it feel more filling. Feel free to make this the night before a gathering or game – it will taste better once the flavors have mixed a bit!

4. Cauliflower Rice Enchilada Casserole

Here’s a great recipe for big families or family events. Featuring cauliflower “rice” and vegan queso, the layers all meld together to create Mexican flavor paradise.

5. Lentil Taco Wraps

Most Mexican recipes are easily adapted by simply removing the meat, but you can make each recipe go farther (and fill you up more) by simply adding a beefy alternative like beans. Enjoy these gorgeous wraps, or use the lentil “meat” in salads, enchiladas, and chili.

6. Mexican “Street” Corn

Tired of boiling corn on the cob? You have to try this recipe! Sweet and spicy, this grilled corn on the cob recipe will change your life.

7. Stuffed Avocados

You wouldn’t think that roasted avocados would taste so good! Make this plant-based meal more well rounded by using the lentil taco meat above instead of a processed “faux” meat.
