White Bean Salad

A light and refreshing salad that's perfect for lunch or serve it as a side with dinner. Enjoy!

Ingredients:

1 (15oz) can butter bean (or other white bean), drained and rinsed

1 small tomato, washed and diced

1/2 small white onion, peeled and diced

2 cups finely chopped kale

1 small cucumber, washed and diced

1 tbsp extra virgin olive oil (optional)

1 lime, squeezed

sea salt, to taste

1 haas avocado, halved, cored, peeled and sliced

dried parsley flakes, to taste

freshly ground pepper, to taste

Preparation:

(Serves 2)

1. In a mixing bowl, first combine the tomato, onion, kale, and cucumber. Then add the olive oil (optional), lime juice and salt, and toss together. 

2. Then gently mix the beans into the mixing bowl and serve.

3. Top with sliced avocado, sprinkle with dried parsley flakes and freshly ground pepper and enjoy!!
